Every stock photographer always asks the question:

Which image categories are the photo buyers licensing or searching?

If you are already with an agency/stock library, they will send you emails with regular updates. You should also check other stock agencies' website. Photoshelter has the School of Photography. On the right, under Stock Photography 101, look for the Buyer Survey. I do not give the exact web address for the buyer survey, because it changes every quarter.
